Serves: 3

Ingredients:

  • 2lbs boneless/skinless chicken thighs (6 thighs)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon smoked paprika
  • Finely ground sea salt and ground pepper, to taste

Instructions:

  1. Preheat your oven to 450°F
  2. Pat the chicken thighs dry with paper towels. This helps the skin become crispy.
  3. In a small bowl, mix the minced garlic, thyme and sage together.
  4. Rub the chicken thighs with olive oil and sprinkle the seasoning mixture evenly over both sides of the chicken thighs. Place in a baking dish and sprinkle the top of chicken thighs with smoked paprika, salt and pepper.
  5. Bake for 20-25 minutes, or until the internal temperature reaches 165°F.
  6. Let the chicken rest for about 5 minutes after baking to allow the juices to redistribute. Enjoy!

Recipe Notes:

  • You can marinate the chicken thighs in the seasoning mixture and olive oil for a few hours or overnight for a deeper flavor.
